This recipe uses aquafaba instead of egg whites to make a really quick and easy rich but healthier chocolate mousse. Use a good quality Fairtrade chocolate too. Aquafaber is the liquid from a can or carton of chickpeas. Simply drain the can of chickpeas collecting the liquid and you are ready to make this delicious dessert. You can use standard caster sugar, but coconut sugar is more nutritionally beneficial – plus it gives the mousse a lovely texture and adds a wonderful additional flavour.
Ingredients – makes 3-4
- Aquafaba from one can of chickpeas (400g tin)
- I bar (100g) dark chocolate – try for at least 70% cocoa
- 2 tablespoons of coconut sugar
- 1 teaspoon of vanilla extract (optional)
- half teaspoon finely ground salt (pink salt or sea is best)
- Berries and gelatine free mallows to decorate. Mint leave are also nice if you have any to hand.
Break up the chocolate bar and place the pieces in a metal bowl over a pan of simmering water (make sure the water in the pan does not not touch the bowl) and melt. Once melted remove from the pan and leave to cool slightly.
In a large mixing bowl whisk the aquafaba with a hand-held mixer for at leat 7 minutes until it stiffens up as egg whites would and you can lift up peaks with the whisk ends. With a metal spoon gentle fold in the melted chocolate, the vanilla and the coconut sugar. Do not stir it or the air will lost in the fluffy aquafaba.
Divide the mix into 3 or 4 glasses or pots and chill in the fridge for at least an hour. 2-3 hours is best – but I’m pretty impatient when it comes to knowing there is a treat in the fridge!
Once chilled you can add your toppings, any berries work well, sliced or whole, a handful of gelatine-free marshmallows (we use Freedom Mallows).

6.1.1. any postponement or cancellation of the Competition;
6.1.2. any changes to, supply of or use of the Prize; and
6.1.3. any act or default of any supplier, which are beyond Little v Big v’s reasonable control.
6.2. Little v Big v does not accept responsibility for any liability arising from technical incompatibility, problems relating to the internet, or technical difficulties of any kind

Little v Big v shall not be liable, whether in tort, contract, misrepresentation or otherwise for loss of profits, loss of anticipated savings, loss of goods, loss of use, loss or corruption of data or information, or any special, indirect, consequential or pure economic loss, costs, damages, charges or expenses
